The Aggie Chocolate Café Manager (ACCM) will coordinate the production of food items thatuses and highlights Aggie Chocolate. The ACCM will prepare a variety of foods and ensure thatquality and cost standards are consistently attained. The ACCM also supports the primarymission of the ACF to support learning, research, and outreach activities related to cacao andchocolate production.Reporting and Supervisory ResponsibilitiesThe ACCM reports to the Director of the Aggie Chocolate Factory and works closely with theAggie Chocolate Factory Manager. The ACCM will train, guide, and manage servers andcashiers employed by the Aggie Chocolate Café (hourly, and student employees) and willoversee the daily operations of the Café.Typical Functions:Prepares and presents food and/or instructs and guides kitchen and Café staff in thecooking and presentation of food.Monitors sanitation and safety to ensure standards and regulations are followed.Cleans, sanitizes, and maintains work areas, utensils, and equipment.Attends to day-to-day problems concerning food and food supplies; detects and ensuresdisposition of spoiled or unattractive food as necessary.Inspects supplies, equipment, and/or work areas to ensure conformance to establishedstandards.Determines café schedules necessary to ensure timely delivery of services.Determines how food should be presented and creates decorative food displays.Reviews recipes and evaluates processes to continuously improve the effectiveness andquality of products being produced.Develops new recipes as neededPurchases ingredientsOversees the operation of the Aggie Chocolate Café such as scheduling employees,performing cash reconciliations, etc.Documents recipesDocuments business processesWorks enthusiastically with colleagues to build the Cafe business and help build theAggie Chocolate Factory (ACF) businessSupports the ACF and its primary missionPerforms miscellaneous job-related duties as assigned.Writes, develops, and publishes material for websites and other social media and/orpublications as requested.ApprovalsThe ACCM will obtain approval from the ACF Director for all significant purchases andbusiness decisions and on a regular basis provide status reports to the ACF DirectorKnowledge, Skills, and AbilitiesAbility to monitor and/or maintain quality control standards.Ability to understand and follow specific instructions and procedures.Ability to train and/or guide culinary staff, servers, and students.Knowledge of maintenance and care of culinary facilities, equipment, supplies, andmaterials.Knowledge of organizational structure, workflow, and operating procedures.Ability to read, understand, follow, and enforce safety procedures.Knowledge of food preparation and presentation methods, techniques, and qualitystandards.Fundamental AbilitiesWithin the scope and complexity of each position’s responsibilities, each incumbent is expectedto possess and demonstrate the following abilities:Communicating: Communicates effectively both verbally and in writing.Problem solving: Analyzes information and evaluates results to select the best solutionand solve problems.Monitoring: Measures performance of self; makes improvements and takes appropriatecorrective action.Critical Thinking: Comes to well-reasoned conclusions, solutions, and approaches toproblems.Team Building: Works to create a team-based environment.
